For the first time, prestigious French chocolatier Valrhona, has co-branded with London’s Hotel Café Royal to create an exclusive new chocolate: Profile 66 – a world’s first for Valrhona. This chocolate has been developed by Hotel Café Royal’s executive pastry chef Andrew Blas with the Valrhona team following exhaustive tastings.
The Profile 66 bar will be available from Easter 2015: the 100g bar will be priced at £5. From 14 October 2014 Profile 66 will be used in all chocolate patisseries, petits fours and drinks throughout the hotel’s food and beverage outlets including The Ten Room restaurant and Green Bar.
A journey in taste
As with wine tasting, where grapes give a wine character based on where they are grown in the world and environmental conditions, cacao beans provide flavours that can be influenced by a multitude of variables. Having tirelessly researched and tasted numerous flavour combinations, Andrew Blas has created a bar made from different cacaos, that will take you on a journey in taste, just like a fine wine. Upon tasting Profile 66, guests will experience floral notes, followed by nuttiness and a hint of spicy citrus, ending with a cocoa silky finish.
Celebrating the European tradition of café culture, The Café is a beautiful and impressive space made from golden Sienna marble located on vibrant Regent Street. The Café is open daily from 8am to 10pm.
