Now he is all set to conquer London as his eagerly awaited and exciting new brand NY Fold arrives here in July. Together with his partners, and fellow New Yorkers, Michael and Annabel Wheeler, Bruno has just one aim, to bring incredible tasting, obsessively authentic New York Pizza to the UK.
No forks or knives required
Located on Charing Cross Road, and named in honour of how pizza is eaten in New York City – no forks or knives required – NY Fold will offer great value, award-winning, pizza, together with handmade foccacia sandwiches, fresh pastas, salads, desserts and American beers – all served with passion and personality in a relaxed, New York-style environment.
Food theatre
Fiercely proud of its old school roots, and with a genuine love for the art of pizza making, NY Fold’s hallmark tossing of the dough will offer audiences a vibrant display of food theatre and showmanship.
The creations here are significantly different from the Neapolitan style wood fired oven pizza styles that have proliferated the market.
NY Fold uses a secret pizza dough recipe made from a two-part fermentation process. Aged for a minimum of 48 hours, it results in the most irresistibly delicious, crispy, super digestible and airy bread-like crust in the world.
Toppings are equally superior, spearheaded by freshly made tomato sauce, seasoned with 12 fresh herbs and spices and packed with flavour. The 60-day aged mozzarella meanwhile is made from fresh whole milk, harvested daily from an award-winning farm in Caserta, Italy.
Set to become favourites on NY Fold’s menu are signature creations such as Big Daddy - fresh spinach, artichoke hearts, garlic, white onion, mozzarella and a touch of lemon, all blended into the most awesomely creamy concoction.
