Christmas in Cusco? Fireworks in Lima? Transatlantic travel not necessary. Martin Morales is bringing punchy Peruvian flavours combined with the best British seasonal ingredients to London this Christmas for alternative celebrations at Cevicho Soho, Ceviche Old St, Andina and Casita Andina.
“Christmas, or “La Noche Buena”, is a very special celebration in Peru with food playing a crucial role in the festivities whether you are in Lima, Cusco or Ayacucho. I want to showcase a taste of Peruvian Christmas to London with each of our restaurants bringing something a little different to the party season from different regions of Peru” Says founder, Martin Morales.
Each restaurant will be focusing on their own uniquely different dishes from the regions that inspired their creation, whilst all collaboratively celebrating Wild British ingredients venison and boar, to bring a festive twist to their menus.
Andina, the modern day picanteria in Shoreditch are offering two sharing menus including Cachetes with panca chilli braised pork cheeks, cassava roots mash and tamarillo salsa, and Aguadito de Mariscos; seared king prawns, squid and mussels, prawn bisque, squash, coriander rice. Alongside this you can also order a whole marinated roast piglet in pisco and goldenberry, with cassava and broad beans. The Music Room, with its walls decked out with an impressive collection of 7 inch Peruvian vinyl, allows you to play your own music and set the perfect atmosphere for a Christmas party.
Seasonality is strongly driving the festive menu at Casita Andina, Soho. The wild venison in the Venado de la Sierra is sustainably sourced from The Yattendon Estate in Berkshire but gets an Andean makeover, rubbed with Peruvian coffee and cocoa and served with roasted celeriac and panca chilli dust, making a unique Christmas dish. Another highlight is Puka Picante: a traditional vegan dish from the Andean town of Ayacucho with Heritage Peruvian potato, beetroot panca sauce, smoked fresco cheese and huacatay herb and Pork Shambar from the region of La Libertad with crackling pork, creamy mixed pulses, shambar sauce and salsa criolla.
Ceviche Soho will be bringing the soul of Lima to Christmas festivities where guests can indulge in sharing menus with coastal Peruvian inspired dishes like Seco de Cordero: Braised lamb, dark beer and coriander sauce with butter bean tacu tacu, Picante de Pato: Braised duck leg, panca-peanut sauce, steamed rice, choclo corn and Panetón Miraflores: Peruvian fruit cake, dry goldenberries, chancaca custard.
Ceviche Old St, housed in what was once the legendary and now fully restored Alexandra Trust Dining Rooms. Inspired by the coast, Andes and Amazon of Peru you’ll find Christmas dish the Forest of Dean Wild Boar Seco; braised in smoked panca chilli and pomegranate molasses, apple cider, Amarillo chilli, five-spice, cumin, onions and garlic. Served with a cream of apple, rice and onions. Alongside dishes such as, Charred Sprouts; sautéed Brussels sprouts, amarillo chilli, pisco raisins, almonds and Parsnip Glazeado: Chancaca glazed parsnips with chopped pecans as well as the delicate Tiradito de Lenguado; Lemon sole, yuzu tiger’s milk, pink grapefruit, radish, coriander powder, choclo corn.
