Soupe du Jour is the new London eatery based on traditional soup recipes from around the world. Think ‘Grandma’s best soup’ with a thoroughly modern twist. Michelin Star-trained chef Jona Eckerlein has created a myriad of mouth-watering recipes that take traditional soups to the next level, and offer a truly healthy lunch option for busy Londoners.
For less than £5.00, diners at Soupe du Jour can choose from eight mouth-watering soups every day, each with garnishes, inlays and toppings – all served up with a slice of handmade German bread to make a full meal, rather than a starter or prelude to the main event.
Gluten and dairy-free
All the soups are gluten and dairy-free, with natural sweeteners like honey used wherever necessary. All vegetables and ingredients are locally sourced, and the meat used is produced under the highest animal welfare standards. Ethical soup is here to stay!
There are currently two Soupe du Jour premises in London – the first has been open for six months in London’s Soho area, while the second outlet just opened at CITY, 38 Houndsditch, near the busy Liverpool Street Station.
Here, to give an insight to Soupe du Jour, is the recipe to a customer favourite –
The Carrot Ginger Soup
Prep time 15 min – Cooking time 30 min
What you need (4 people):
- 2 tbsp vegetable oil
- 8 large carrots, peeled and thinly sliced
- 1 white onion, peeled and chopped
- 2 tsp grated ginger 500ml vegetable stock
- 500ml water
- 2 oranges
- Chopped parsley for garnish
- Salt
What to do:
- Heat the oil in a soup pot on medium temperature and sweat the onions and the carrots until the onions are soft but not coloured (about 10 minutes).
- Season with one teaspoons of salt.
- Add stock and water to the vegetables and squeeze in the juice of the two oranges. Then add the ginger. Bring it up to a simmer and cook until carrots are soft (about 25 minutes). Btw: Cooking carrots enhaunces their sweetness and can enhance their nutritional value, making nutrients easier for your body to digest.
- Blend the soup with a stick blender until it is completely smooth and salt to taste.
- Garnish with chopped parsley.
- Enjoy!
