The Royal Exchange commemorates the 350th Anniversary of the Great Fire of London 3

This September, the Royal Exchange will be serving a range of fire-inspired dishes to mark 350 years since the Great Fire of London, which swept through the city in 1666 leaving the Royal Exchange a mere shell.

In Sauterelle restaurant, new dishes on the menu have been created to represent the three stages of a fire, starting with smoke in a starter of Smoked burrata with marinated beetroot, herb salad and coal burnt bread; heat symbolised by a fiery main course of Cornish crab and mascarpone tortelloni with peperonata and fresh chilli, and finishing with ash, realised in a dessert of Ash meringue and black sesame ice cream with vanilla goat’s cheesecake and chocolate.

Guests will also be able to enjoy the London Bridge is Falling Down twist on an Old Fashioned, with bourbon, Islay peaty whisky, cinnamon, oregano sugar and orange, served with a burnt cinnamon stick.  Meanwhile in the Grand Café, guests will be able to sample dishes such as Risotto with smoked paprika, tomato, saffron and smoked truffle foam, and Hickory smoked chocolate truffles with chilli espelette and aniseed.
