On 28 November, Aquavit London will open in the stunning new St. James’s Market redevelopment, on 1 Carlton Street. Taking inspiration from the renowned Aquavit New York, but with a more relaxed setting and new all day dining concept, the restaurant will showcase the very best of Nordic cuisine and design.
Dishes at Aquavit London will honour fresh, seasonal ingredients and deliver a contemporary take on authentic Nordic cuisine, with menus developed by Henrik Ritzén, Executive Chef of Aquavit London, and Emma Bengtsson, Executive Chef of the two Michelin-starred Aquavit New York. To begin, guests will be able to enjoy a smörgåsbord of small sharing plates that will celebrate the Nordic region’s traditional seafood dishes, including Shrimp Skagen; Herrings; Gravadlax; and Vendace roe. The menu will also offer starters such as Venison tartar with wild blueberries, lingonberries and juniper, and Langoustines with smoked eel and crown dill, as well as main courses including Turbot with horseradish and brown butter, and Swedish meatballs with lingonberries and pickled cucumber. For dessert, guests will be able to sample everything from Emma Bengtsson’s New York signature Arctic Bird’s Nest; to Rosehip soup with almond ice cream, almond cake and rum.
Furthermore, Aquavit London will offer an all-day dining experience, allowing guests to indulge in the Swedish tradition of fika throughout the day with coffee from Johan & Nystrom and freshly-baked cinnamon rolls and cardamom buns. The restaurant will also serve a wonderful array of both contemporary and traditional Nordic breakfast dishes, such as Ewes’ milk yoghurt with cloudberry compote and Organic granola; Raggmunk with bacon and lingonberries; or Crisp rye bread with boiled eggs, smoked cods’ roe and avocado.
Overseen by the design studio of Swedish-born Martin Brudnizki (The Ivy, Scott’s and Sexy Fish), Aquavit London has been inspired by Gunnar Asplund’s design of Gothenburg City Hall in Sweden, and the restaurant will showcase celebrated Nordic designers in a laid-back yet sophisticated environment. An exquisite wall-mounted textile, The Green Glass Carpet by Olafur Eliasson, will take centre stage and sit alongside silverware from Georg Jensen, artwork from Andrea Hamilton, and furnishings by Svensk Tenn, with every detail coming together to exude a contemporary Nordic aesthetic. The expansive dining space will be flooded with natural light from the building’s glass façade, and the restaurant will also encompass two generous private dining rooms, and a handsome marble bar serving an extensive list of aquavits and Nordic-inspired cocktails.
The restaurant has been brought to the UK by Philip Hamilton, CEO of Aquavit London, who speaking of the opening said: “Since living in London I have been struck by how much Britain has embraced Nordic culture, and with the opening of Aquavit I am excited to be part of the creation of a place where Londoners and Scandinavians alike can come together to enjoy the very best of this region”.
