One of Scotland’s most exciting up and coming young chefs John McNulty, is relaunching The Taynuilt Hotel, where he is Chef / Patron, as The Taynuilt: Etive Restaurant with Rooms in January 2017.
John bought the traditional coaching inn in 2012 and renovated it, opening a restaurant – The Snug to great acclaim. Now, after four years, with a loyal foodie following and two AA rosettes under his belt, John has not only outgrown The Snug but wishes to re-focus on the food aspect of the business. As a result he is set to move the restaurant to a larger dining room which will re-open in early 2017. The new name pays tribute to the original, historical coaching Inn with a nod to nearby Loch Etive.
The Etive will be a showcase for John’s cooking and will be an intimate fine dining experience with only 20 covers ensuring diners receive the very best of Scottish food, hospitality and service. The dining room itself will be an inviting space which will exhibit the history of the hotel across the traditional stone walls, whilst the floor has been stripped back to the original floorboards. The old Snug restaurant will be converted into a private dining and tasting area.
Menus will concentrate on provenance: John intends to use only local suppliers, where possible, and produce from the established kitchen garden, as well as creating dishes using the on-site smokery. Meat will be respected with much of the animal being used across the menu. John enjoys creating an element of theatre for his diners, to stimulate all the senses, so expect some elements of surprise and resident sommelier David Lapsley of The Wine Closet will be on hand to provide expert wine pairings.
John McNulty says of his new endeavour:

Cooking and creating delicious food is my passion, and to be able to do that in such a beautiful part of the world is a dream. I’m looking forward to welcoming old and new visitors into The Taynuilt: Etive Restaurant and Rooms and sharing this new project with them.”
In addition to the Etive, guests who wish for something more casual will be able to enjoy a separate menu in the relaxed hotel lounge. The traditional coaching inn will offer nine comfortable and contemporary bedrooms for foodie travellers, each named after Scottish Lochs.
