Throughout January, Berber & Q Shawarma Bar are beating back the post-festive blues with a guest chef collaboration series in celebration of the humble but mighty pita. Josh Katz and Mattia Bianchi are welcoming four of London’s hottest chefs to their Exmouth Market kitchen to create a pita that will run as a special on the Shawarma Bar menu for a week. The line-up sees Dan Doherty of Duck & Waffle, Tom Browne of Decatur, Miles Kirby of Caravan and Sam Clark of Moro let their Middle Eastern creative juices run wild with each chef putting their stamp on the classic pita.
Kicking off proceedings on the 9th of January is Dan Doherty with his Crispy duck shawarma, duck fat toasted pita, chilli and pomegranate glaze, pickled cucumbers and onions, roasted garlic and sumac yoghurt. Tom Browne steps up to the plate in week two with Kibbeh spiced pork belly boudin-blanc, ‘white trash’ hummus made with crawfish boil spiced peanuts, and sumac salad, salgam and zereshk, a Persian barberry jam. Pitas in the third week of the collaboration are courtesy of Miles Kirby, with his Roast lamb, kimchi slaw, gochujang ketchup and mint yoghurt pita. Last but by no means least, Sam Clark will be serving Lamb shish pita with tomato and cinnamon, yoghurt and chilli butter, burnt aubergines, pomegranate, coriander and pine nut salsa.
The collaboration will culminate in the grand-finale on February 5th, the one-off Pita Party, when Josh and all four chefs will come together to showcase their dish. Guests will receive a half pint of the Shawarma Bar and CRATE Brewery collaboration golden ale with za’taar, sumac and orange on entry as well as a mini pita from all four guest chefs and one from Shawarma Bar’s very own Josh Katz. No Pita Party would be complete without music so guests can expect tunes to be pumping from the sound system.
Keeping everyone well hydrated all evening, Mattia Bianchi will be serving a selection of European and Middle Eastern wines such as the Pata Trava KTMA Ligas 2014 from Pella, Greece and the Rkatsiteli Pheasant’s Tears 2015 orange wine from Kahketi, Georgia. Vintage Shawarma Bar cocktails like the Dirty Sultan; La Purite Vedre Mezcal, Campari, Contratto americano, peach liqueur, rose water, grapefruit bitters and the Spy From Cairo; Ron Barcelo rum, pistachio syrup, lime and egg white will also be on offer.
‘Each of the chefs has stepped it up a notch with their pita recipes, they sound top drawer and I can’t wait to try them,’ says Josh Katz. Mattia adds, ‘January is looking up already, the culmination of these collaborations at the Pita Party is an event not be missed.’
