This April, French chef and cookery writer Stéphane Reynaud will open Tratra at the popular East London hotel, Boundary, in Shoreditch.
With nine books to his name (including the best selling Ripalles, Terrine, Pork & Sons, and The Book of Tripe) and another due to be published in October, Reynaud has sold over one million books worldwide.
The restaurant at Boundary will be his third restaurant and first outside Paris. A chef for 25 years, his casual cuisine is largely inspired by recipes from the Ardèche region in south-central France, where he spent his childhood. Having grown up in a family of pig farmers and butchers, Stéphane naturally places a huge emphasis on meat and charcuterie.
