Glamorous, charming and still with a trace of its bohemian past, Fitzrovia enjoys a unique reputation as a village in the heart of the West End. So how fitting therefore that two of its most esteemed locals, Ollie Dabbous, head chef and co-owner of Dabbous and Diego Cardoso, executive chef at Percy & Founders, are strengthening neighbourly bonds still further by collaborating on an unmissable one-off supper club on Tuesday 18th October.
With both known for their skill in creating deceptively simple fare from traditional British ingredients, this event will see Ollie and Diego, who arrived at Percy & Founders after a six-year stint as head chef at Angela Hartnett’s Murano, prepare alternate dishes that each demonstrate their innate understanding of flavour and texture.
Hosted at Percy & Founders, Ollie will begin proceedings with a starter of charred brassicas over hot coals, walnuts & fenugreek. To follow will be Diego’s middle course of roasted John Dory, girolles, yoghurt & cucumber dressing complemented by Ollie’s offering of pork jowl, green peppercorns, marigold & fennel. Diego will then bring the proceedings to a close with his fromage frais sorbet, toasted pumpkin seeds, honeycomb & blackberries.
A true journey of discovery, the supper club will also feature a matching wine flight paired by Percy & Founders’ head sommelier Marc-Andrea Levy. Showcased will be wines made with minimum intervention, by artisan producers who show full respect to nature.
Says Ollie Dabbous, “Diego is a good friend, as well as a great chef. Having been neighbours now for over 18 months, we thought why not pool our talents and offer our customers something a little different? We are both really looking forward to the experience.”
Says Diego Cardoso, “I’m very excited to welcome Ollie to our kitchen and to be cooking alongside him, he’s a great guy with a passion for food which is reflected in his cooking. It will be a fun night!”
